Sheet Pan Halloumi with Zucchini & Veggies

Sheet Pan Halloumi with Zucchini & Tomatoes

Ingredients

  • 2 medium zucchini or summer squash, or one of each, cubed
  • 1 1/2 cups cherry tomatoes
  • 4 cloves garlic, coarsely chopped
  • 1 8-ounce package halloumi cheese, cubed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley and basil, chopped

Directions

  1. Preheat oven to 425°F.
  2. Add the zucchini, cherry tomatoes, garlic, and halloumi to a large bowl. Drizzle with olive oil, season with salt and pepper, and toss until everything is evenly coated.
  3. Spread the mixture evenly onto a sheet pan. Roast for 20–30 minutes, or until the zucchini is tender and lightly browned and the halloumi is golden around the edges.
  4. Remove from the oven, sprinkle with fresh parsley and basil, and serve hot.

What Goes with Halloumi?

One of the best things about meals with halloumi is how easily the cheese pairs with other ingredients. Its salty flavor works especially well with fresh or roasted vegetables, grains, herbs, and bright, acidic flavors.
