  • 6 boneless chicken thighs
  • 1 head of broccoli, cut into florets

  • 2 tbsp avocado or olive oil

How to Make Sheet Pan Honey Mustard Chicken

1. Preheat the oven.
Preheat your oven to 425°F and prepare a large sheet pan.

2. Make the honey mustard sauce.
Whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, salt, and pepper until smooth.

3. Prepare the vegetables.
Add the sweet potato, broccoli, and red onion to the sheet pan. Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.

4. Coat the chicken.
Coat the chicken thighs generously with the honey mustard sauce.

5. Add the honey mustard chicken to the sheet pan.
Arrange the chicken thighs among the vegetables and spoon any remaining honey mustard sauce over the chicken.

6. Bake the chicken and vegetables.
Bake the honey mustard chicken and vegetables for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender. For crispier vegetables, remove the cooked chicken and return the vegetables to the oven for a few additional minutes.

7. Serve and enjoy!
Divide the roasted vegetables and honey mustard chicken between plates and serve warm.
