Apple Cheddar Frittata

8 eggs
1/2 cup half and half or whole milk
1 heaping cup grated cheddar cheese
1/4 teaspoon sea salt
White pepper, to your liking
Big pinch nutmeg
1 tablespoon butter
1 large apple or 2 small apples, thinly sliced (peel on is fine)
Optional: 4 slices cooked, crumbled bacon

  1. Preheat oven to 425°F. Whisk together the eggs, half the cheese, bacon, if using, salt, pepper, and nutmeg.
  2. In a 10-inch cast iron skillet, heat butter over medium heat and swirl to coat the sides of the pan. (If you include bacon you can use the bacon fat instead of butter.) Layer half the apple slices in the butter. Pour in egg mixture. Layer remaining apples on top and sprinkle with remaining cheese. Cook, undisturbed, about 3-5 minutes until edge is set.
  3. Place skillet in oven. Bake until frittata is set in the center and cheese is browned, about 15 minutes. Cut into into wedges and serve hot.

Apples that would work well for this recipe: gala, granny smith, braeburn, honey crisp. Almost any apple except red delicious, which is best eaten raw.
