Roasted Red Pepper Feta Dip

Ingredients:

  • 2 whole roasted red peppers
  • 2 cups crumbled feta cheese
  • 1 clove garlic, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 green onion, sliced thin on the diagonal

Instructions:

  1. Combine all the ingredients except green onion in a food processor. Pulse for 10 seconds, scrape down the sides, then repeat until combined, about 1 minute. Add a little water to thin if desired.
  2. Spoon into a bowl and sprinkle with green onion. Serve with celery, toasted pita, crostini, tortilla chips, or broccoli. Makes 1 1/2 cups.
