Ingredients
- 2 pounds lamb shoulder, cut into chunks (or substitute with grass-fed beef)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil or butter
- 1 large onion, chopped
- 3 large carrots, peeled and cut into chunks
- 4 large potatoes, peeled and cubed
- 4 cups vegetable or beef broth (we love using locally made stock for extra richness)
- 1-2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 1 bay leaf
- Fresh parsley, for garnish
How to Make It
Sear the Meat – Heat oil or butter in a large pot over medium heat. Season the lamb with salt and pepper, then sear it on all sides until golden brown. Remove and set aside.
Sauté the Veggies – In the same pot, add onions and cook until softened. Toss in the carrots and potatoes, stirring for a couple of minutes.
Simmer & Let the Magic Happen – Return the meat to the pot and pour in the broth. Add thyme and bay leaf, then bring to a gentle simmer. Cover and cook for about 90 minutes, or until the meat is fork-tender.
Taste & Adjust – Remove the bay leaf, taste the broth, and add more salt or pepper if needed.
