This creamy sauce works well with both vegetarian and meat dishes.
Ingredients:
- 1 15-oz. can coconut milk
- 1/2 cup smooth peanut butter
- 3 tablespoons harissa sauce (Mina brand)
- 4 teaspoons soy sauce
- 1 tablespoon minced fresh ginger or 1 tsp dried ginger
- 2 cloves garlic, minced
- Juice from 1 lime
- 1 tablespoon rice vinegar
Instructions:
Whisk all ingredients together in a bowl or whiz in a blender. Taste and add more soy sauce or lime juice if needed.
Serving Suggestions:
Serve with rice/rice noodles and veggies or use it as a dip for asparagus, snap peas or carrots.
