Cheesy Welsh Rarebit: More than Just Cheese on Bread!

Ingredients:

  • 1 cup (120g) grated Red Dragon cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup (120ml) ale or beer
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon English mustard
  • Salt and freshly ground black pepper, to taste
  • 4 slices of crusty bread

Instructions:

  1. Melt butter in a saucepan over medium heat.
  2. Stir in flour to form a smooth paste; cook for 1–2 minutes.
  3. Gradually whisk in ale until the mixture is smooth and thickened.
  4. Add grated Red Dragon cheese, Worcestershire sauce, and mustard; stir until cheese is melted and the mixture is smooth.
  5. Season with salt and pepper to taste; remove from heat.
  6. Toast bread slices until golden brown.
  7. Spread cheese mixture evenly over each slice.
  8. Place under a preheated broiler until the topping is bubbling and lightly browned.
  9. Serve immediately.
