- Salt and freshly ground black pepper, to taste
- 4 slices of crusty bread
Instructions:
- Melt butter in a saucepan over medium heat.
- Stir in flour to form a smooth paste; cook for 1–2 minutes.
- Gradually whisk in ale until the mixture is smooth and thickened.
- Add grated Red Dragon cheese, Worcestershire sauce, and mustard; stir until cheese is melted and the mixture is smooth.
- Season with salt and pepper to taste; remove from heat.
- Toast bread slices until golden brown.
- Spread cheese mixture evenly over each slice.
- Place under a preheated broiler until the topping is bubbling and lightly browned.
- Serve immediately.
