There’s something about summer up north that calls for gathering around the grill. Whether you’re lakeside, backyard-bound, it’s the season for keeping things fresh, flavorful, and fun.
Oryana owner Bob Aicher shared one of his favorite warm-weather recipes with us, a creative twist on grilled fruit that combines bright pineapple, warm spices, and a splash of tequila for a treat that’s just as great for dinner parties as it is for casual weeknight grilling.
This simple dessert is easy to prep, quick to grill, and seriously crowd-pleasing.
Serves: Six
- 3/4 cup tequila
- 3/4 cup (packed) golden brown sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 large pineapple, peeled, cored, cut into 2×1 inch pieces
- 6 bamboo skewers, soaked in water 30 minutes, drained
1. Stir first 4 ingredients in small bowl until sugar dissolves.
2. Thread pineapple pieces onto 6 skewers, dividing equally.*
3. Prepare barbecue (medium heat).
4. If available, place pineapple skewers in a metal basket designed for grilling.
5. Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10
minutes total. Serve immediately. Pineapple can be removed from the skewers if desired.
*Tequila mixture and pineapple skewers can be made 8 hours ahead. Cover separately and chill.
