Roasted Chicken Ingredients
- 4 boneless chicken thighs*
- 1 bunch asparagus, trimmed
- About 2 lbs small or new potatoes, halved or quartered if large
- Olive oil
- Salt and pepper
- Optional seasonings: lemon juice, garlic powder, seasoned salt, paprika, Parmesan cheese
Instructions for Making Roasted Chicken
- Preheat the oven to 425°F.
- Roast the potatoes. Toss the potatoes with about 2 tablespoons of olive oil in a bowl. Season generously with salt and pepper, or seasoned salt. Add garlic powder or paprika for extra flavor, if desired. Spread the potatoes on a baking pan, leaving room for the chicken and asparagus. Roast for 15 minutes.
- Add the chicken. Toss the chicken thighs in the same bowl with about 1 tablespoon of olive oil. Season with salt, pepper, and any additional seasonings you enjoy. Remove the pan from the oven, add the chicken thighs, and roast for another 15 minutes.
- Add the asparagus. Remove the pan from the oven and arrange the asparagus spears alongside the chicken and potatoes. Drizzle with a little olive oil and season with salt. Turn the potatoes if they’re browning too quickly on the bottom. Sprinkle Parmesan cheese over the potatoes, if desired.
- Finish roasting. Return the pan to the oven and roast for another 15 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender. Finish with a squeeze of fresh lemon juice over the asparagus, if desired. Serve immediately!
Cooking Tip: You can use bone-in chicken thighs instead, but add them to the pan at the same time as the potatoes. Cooking times may vary depending on the size of the chicken.
