A quick and easy take on everyone’s favorite sandwich! Perfect for entertaining and feeding your game day crowd.
Ingredients:
- 2 whole wheat flour tortillas
- leftover roast pork, sliced
- 2 slices ham
- 1 pickle, thinly sliced
- grated Swiss cheese or cheddar cheese
- yellow mustard
Instructions:
- Spread mustard on each tortilla. Sprinkle some cheese on one half of each tortilla. Place ham and pork over the cheese. Layer pickle slices over the meat and sprinkle with more cheese. Fold tortillas over and press with your hand.
- Heat a lightly oiled cast iron pan or heavy skillet over medium heat and place quesadillas in pan. Cook until browned, pressing down with a metal spatula. Carefully flip and brown the other sides. Or cook on a panini grill. Serve immediately.
