Swiss Chard Scramble
1 tablespoon butter
1 small onion, chopped
2 garlic cloves, minced
1 bunch chard, leaves and stems chopped separately
1/2 cup ham, chopped
4 eggs
2 tablespoons milk
Sea salt and pepper to taste
Heat butter over medium heat in a large skillet. Saute onions until tender, and then add garlic and cook for another minute. Add chard stems and ham and cook a few minutes. Stir in chard leaves, and cook about 3 minutes until chard is wilted. While chard is cooking, whisk together eggs and milk, salt and pepper. Pour eggs into the skillet and stir until eggs are set. Serve immediately.
