Breakfast Rice Pudding with Golden Raisins and Bacon
2 cups cooked brown rice*
1 cup milk
1 egg
2 tablespoons maple syrup, or more to taste
pinch sea salt
1/4 cup golden raisins
1/2 teaspoon vanilla
2 slices bacon or turkey bacon, cooked, chopped
Whisk together the milk, egg, maple syrup, and salt in a small, heavy sauce pan. Stir in the cooked rice and raisins. Cook over medium low heat, stirring ocassionally, until thickened and hot, about 8 minutes. Remove from heat and stir in vanilla. Serve with chopped bacon sprinkled on top.
*To cook the rice, bring 1 cup brown rice, 2 cups water, and a pinch of sea salt to a boil. Reduce heat to low, cover, and cook for 45 minutes. Remove from heat and let steam for 10 minutes. Fluff with a fork.
