Loaded Greek Tofu Fries

These loaded Greek tofu fries are a protein-packed, plant-based twist on a classic comfort food. Featuring our Un-Brie-Lievable cashew cheese, Greek-marinated smoked tofu, and fresh veggies, this is a recipe you’ll want to add to your weekly rotation.

 

Ingredients:

  • 1/4 wedge Nuts For Cheese Un-Brie-Lievable
  • 1 Package Greek Smoked Tofu
  • 1/4 cup cucumber, chopped into cubes
  • 1/4 cup bell pepper, chopped into cubes
  • 1/4 tomato, diced into cubes
  • fresh parsley, for garnish
  • 1 tbsp corn starch
  • 1 tbsp Kalamata olives, pitted & chopped
  • 1 tsp olive oil
  • salt & pepper to taste
  • 1/4 cup red onion, thinly sliced

Instructions:

  1. Slice your tofu lengthwise into long, finger-like pieces. You should get roughly 8 pieces from one package if you’re using a package of oomé Tofu.
  2. Lightly coat the tofu with cornstarch, tossing until each piece is evenly coated.
  3. Arrange the tofu in a single layer on an air fryer tray and cook at 350°F, flipping halfway through, for about 5 minutes per side or until golden and crisp.
  4. In a seperate bowl, combine chopped cucumber, bell pepper, tomato, black olives, red onion, drizzle of olive oil, and salt and pepper. Mix to combine.
  5. Cut up a wedge of Nuts For Cheese Un-Brie-Lievable cashew cheese into small cubes.
  6. When your tofu strips are finished cooking, arrange them on a tray and top with your greek veggie salad and Nuts For Cheese Un-Brie-Lievable cashew cheese cubes. Finish with fresh parsley for garnish.
