Game day is back, and nothing goes better with kickoff than something crispy, cheesy, and made to share. These golden-brown blue cheese fritters are the ultimate crowd-pleaser fluffy on the inside, crunchy on the outside, and packed with bold flavor. Dunk them in a smoky roasted red pepper aioli, and you’ve got the kind of snack that disappears before halftime. Whip up a batch, keep them warm in the oven, and let the cheering (and snacking) begin!
Ingredients:
- Salt
- Freshly ground pepper
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup buttermilk
- 1Tb unsalted butter
- 2 TB green onions
- 1 large egg, separated….
- Oil. Vegetable, canola, peanut…your choice
- Blue Cheese cut into bite size chunks
Instructions:
In a large bowl, whisk together the flour, baking powder, baking soda and 1/2 teaspoon of salt. In a small bowl, whisk the buttermilk with the egg yolk. Make a well in the center of the dry ingredients and add the buttermilk mixture. Stir lightly, then fold in the melted butter, blue cheese and green onion. In a medium bowl, whisk the egg white to soft peaks and fold it into the batter.
Preheat the oven to 180°. In a large saucepan, heat 1 1/2 inches of oil to 325°. Scoop a 2-tablespoon-size dollop of batter and then drop it into the hot oil and fry, turning once, until golden brown, about 2 minutes. With a slotted spoon, transfer the fritters to paper towels to drain; season with salt. Transfer the fritters to a baking sheet and keep warm in the oven while you fry the rest.
Roasted Red Pepper Aioli:
In a food processor, mix:
- 1 cup of mayo
- 1 tsp salt
- 1 roasted red pepper
- 3 cloves garlic
