CLASS: Chicken Butchery & Italian Cooking Workshop

Saturday, November 22th from 1pm to 3pm
Join Chef Adam Worden for a hands-on workshop that will teach you how to break down a whole chicken and transform it into classic Italian dishes. In this small-group class, you’ll learn the fundamentals of knife safety, meat handling, and how to get the most out of every part of the bird.
Each participant will work with their own whole chicken, gaining confidence in creating the different cuts, breasts, thighs, drumsticks, wings, and more, while learning how to use each cut in the kitchen.
Once the butchery is complete, we’ll head to the stove for a cooking demo and tasting. You’ll explore two Italian favorites:
- Pollo alla Cacciatora — a rustic braised chicken dish with tomatoes, roasted garlic, and herbs.
- Chicken Piccata — tender sautéed breast cutlets in a bright lemon-caper sauce.
Along the way, Chef Adam will share tips on stock-making, storage, and the Italian philosophy of using every part of the bird. You’ll leave with new skills, recipes, and your own butchered chicken to take home.
