Savory Oatmeal for One
You can vary this any way you want. Add any kind of chopped greens, some roasted veggies, some fat such as coconut oil, top with cheese, sprouts, or any kind of toasted nuts. The sky’s the limit!
1/3 cup oats
3/4 cup water
2 teaspoons nutritional yeast
1 – 2 teaspoons soy sauce or Bragg’s Aminos, or to taste
Handful chopped baby spinach
Half an avocado
1-2 tablespoons roasted sunflower seeds
Add the oats, water, nutritional yeast, soy sauce, and spinach to a small saucepan. Heat to a simmer, cover, and cook, stirring a couple times, for 10 minutes or until desired creaminess. Serve topped with avocado and sunflower seeds.
