Pizza Egg Rolls

Egg roll wrappers can be used for so many things besides eggrolls. Make this tasty snack for your next potluck or super bowl gathering.

1/2 pound bulk Italian sausage
1/2 large green pepper, chopped
1/2 large red onion, chopped
2 cups shredded mozzarella cheese
1/2 cup chopped pepperoni slices
1 can pizza sauce
12 egg roll wrappers
Oil for frying
Additional pizza sauce for dipping, optional

  1. Cook the sausage in a skillet until no pink remains. Scoop out the sausage using a slotted spoon and place in a bowl. Add the green pepper and onion to the pan and cook until veggies soften, about 5 minutes. Add veggies to bowl and toss with the sausage. 
  2. Place about 1 tablespoon of cheese on a wrapper. Add about 2 tablespoons sausage mix and a sprinkling of pepperoni. Add about 2 tablespoons of sauce, followed by another tablespoon of cheese over the top.
  3. Fold bottom corner over filling. Fold in the sides over filling like a burrito. Brush the remaining corner with water and roll up tightly to seal. Repeat with remaining filling.
  4. In a heavy skillet, heat about ½ inch of oil over medium heat. When oil is hot, fry the rolls until golden brown, about 2 minutes per side. Don’t crowd the pan. Drain on paper towels. Serve with additional pizza sauce.
