Peanut Butter Honey Chocolate Chip Cookies
adapted from King Arthur Flour
1-3/4 cups whole wheat pastry flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup smooth peanut butter
1 cup honey
4 tablespoons butter, softened
1 egg
2 teaspoons vanilla extract
1 cup semi-sweet chocolate chips
flaky salt for sprinkling
- Preheat oven to 350°F. Grease 2 baking sheets or line with parchment paper or silicone baking mats.
- Whisk together flour, baking soda and salt. In a separate bowl, combine peanut butter, honey and butter. Add egg and vanilla and mix well. Add flour mixture and stir until combined. Stir in chocolate chips.
- Scoop dough into walnut sized balls and place 1 inch apart on prepared baking sheet. Sprinkle with flaky salt. Bake for 10 – 12 minutes or until golden brown. Cool on baking sheet for 5 minutes. Move to wire rack to cool completely. Makes about 2 dozen cookies.
