Kohlrabi Daikon Slaw with Spicy Honey Vinaigrette
2 green or purple kohlrabi bulbs, peeled, shredded
1 large daikon radish, peeled, shredded
4 scallions, thinly sliced
3 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon dijon mustard
2 teaspoons honey
1/2 teaspoon sea salt
few grinds fresh black pepper
1/2 teaspoon hot sauce, or to taste
Place shredded kohlrabi, daikon, and onions in a bowl. Whisk together the olive oil, vinegar, mustard, honey, salt, pepper, and hot sauce in a separate bowl. Add the dressing to the shredded veggies and toss to coat. Let sit for 30 minutes before serving to allow flavors to meld.
