Harissa Tomato Sauce
Harissa is a spicy, smoky chili paste hailing from Africa. It’s a common ingredient in North African and Middle Eastern cooking.
2 teaspoons olive oil
2 garlic cloves, minced
3 tablespoons harissa
1 cup tomato puree
sea salt, to taste
Heat olive oil in a small pot over medium heat. Add garlic and saute until fragrant, about 1 minute. Add harissa and cook one more minute. Add tomato puree, season with a sprinkle of salt, bring to a boil then reduce heat and simmer for 5 minutes. Remove from heat and let cool to room temperature before serving. Serve with falafel, grilled meats or fish, eggs, beans, or pasta.
