Farmer’s Cheese Pancakes
These pancakes are reminiscent of Russian Syrniki pancakes. They are high protein and more fragile than regular pancakes but oh so delicious!
2 cups (1 lb) farmer’s cheese
3/4 cups all-purpose flour
3 eggs
½ cup milk
1/4 cup cane sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Vegetable oil or ghee or clarified butter, for frying
Toppings: sour cream, fruit, berries, jam, honey
- In a large bowl, beat together the cheese, sugar, eggs and vanilla until smooth. Stir in the milk. Add the flour and salt and mix until smooth.
- Place a large skillet over medium heat and coat the skillet with oil.
- Pour 1/4-1/3 cupfuls of batter into skillet. Cook pancakes until lightly browned; flip carefully and cook the other side. They will be somewhat fragile. Keep warm while cooking the remaining pancakes.
- Serve pancakes topped with fruit, jam, and sour cream.
