Ginger Egg Scramble with Asparagus
4 eggs
1 tablespoon toasted sesame oil
1 lb asparagus, trimmed, cut on diagonal into 1-inch pieces
salt and pepper
4 green onions, trimmed and cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon fresh ginger, finely chopped
2 1/2 tablespoons soy sauce
1/4 cup fresh cilantro, chopped
- Whisk together eggs and soy sauce in a small bowl.
- Heat oil in wok or large cast iron skillet over medium-high heat. Add asparagus, season with salt and pepper, and stir fry for 4 minutes. Add the scallions, garlic, and ginger and cook another minute.
- Add egg mixture and stir fry until egg is just cooked through, about 30 seconds. Toss with cilantro and serve immediately.
