Bistro Salad
1/2 head butter lettuce, torn into bite size pieces
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon dijon mustard
1 tablespoon minced shallot
salt and pepper to taste
Whisk all ingredients together until smooth. Taste and adjust with more salt or vinegar, as desired. Toss lettuce with dressing and serve immediately.
