Big Chocolate Chip Skillet Cookie
6 tablespoons unsalted butter, softened
1/3 cup packed brown sugar
1/2 cup cane sugar
1 egg
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 cup semisweet chocolate chips
optional but nice: flaky salt for sprinkling
- Heat oven to 350°F. In a large bowl, cream together the butter and sugars. Stir in egg and vanilla. Stir in flour, baking soda, and salt until well combined. Stir in chips, reserving 1-2 tablespoons. Pat dough into a well seasoned 10-inch cast-iron skillet using your hands; spread all the way to the edges of the pan and smooth the top. Sprinkle on the reserved chocolate chips and some flaky salt.
- Bake until cookie is golden brown and set in the center, 20-22 minutes. Let cool 30 minutes (if you can wait that long!) Or enjoy while it’s still warm and gooey with vanilla ice cream.
