Banana Chocolate Chip Muffins
3 ripe bananas
3/4 cup packed brown sugar
1 egg
1/2 cup butter (1 stick), melted
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 cup semisweet chocolate chips
- Heat oven to 350°F. Grease a standard 12 cup muffin pan or line with paper cups.
- Using the paddle attachment, mash the bananas in the bowl of a stand mixer. Or mash by hand using a fork in a bowl. Add in the sugar and beat well. Add egg, butter, and vanilla and beat again until smooth.
- Mix together the flour, baking powder, and salt in another bowl and then add to the wet ingredients. Mix just until combined. Add the chocolate chips and briefly mix in.
- Scoop dough evenly into prepared muffin cups. Bake for 22 – 25 minutes or until the tops spring back when lightly touched. Cool in the pan a few minutes, then transfer to a wire rack to cool completely.
