Apple Almond Cake
8 tablespoons (1 stick) butter, melted
3 medium apples, peeled, chopped
1/2 cup whole wheat pastry flour
1/2 cup almond flour
1 teaspoon baking powder
1/4 teaspoon sea salt
2 eggs
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
optional: 1 teaspoon almond extract
1/4 cup slivered almonds
- Heat oven to 350ºF. Spray an 8-inch round cake pan with cooking spray.
- Whisk together the flours, baking powder, and salt together in a bowl.
- Beat the eggs in a large bowl until fluffy. Add the melted butter, brown sugar, and vanilla, and whisk to combine. Add the flour mixture and stir with a spoon until just combined. Fold in the chopped apples.
- Pour the batter into the prepared pan and smooth out the top. Sprinkle the sliced almonds evenly over the batter. Bake until a toothpick or cake tester inserted in the center comes out clean, about 40 minutes. Let cool for 15 minutes before cutting. When it’s completely cool you can run a knife around the edge and invert onto a plate, then invert again onto a serving plate.
