Creamy, comforting, and completely plant-based, these vegan mashed potatoes are a simple side that always delivers. Made with Yukon golds and a few pantry staples, they come together quickly and turn out rich, fluffy, and perfect for soaking up plenty of vegan gravy.
Ingredients:
- 2 1/2 lbs Yukon gold or yellow potatoes, peeled
- 1 tablespoon kosher salt
- 4 tablespoons vegan butter
- Seasoned salt
Instructions:
- Boil the potatoes with 1 tablespoon of salt until tender. Reserve 1 cup of the potato water, then drain the potatoes. Add the potatoes back into the pot.
- Mash the potatoes using a masher. Add in some of the potato water and the vegan butter. Continue to mash until it’s as smooth as you like it, adding in potato water as needed. Taste and add seasoned salt or plain salt, to taste. Serve immediately with vegan gravy.
