Za’atar spice adds a really nice zing to this elegant, delicious carrot dish.
Ingredients:
- 1 bag baby carrots or 1 bunch small carrots, greens trimmed to retain 2-3 inches
- 2 teaspoons za’atar
- pinch cayenne pepper
- 1/2 teaspoon sea salt
- 1 tablespoon olive oil
Tahini Sauce
- 1/2 cup tahini
- 1/4 cup water
- 1/4 cup lemon juice
- 1/4 teaspoon garlic powder
- 1/2 teaspoon sea salt
- parsley for garnish
Instructions:
- Heat oven to 425°F. Toss the carrots with the oil in a bowl. Sprinkle on the seasonings and toss until evenly coated. Spread carrots on a rimmed baking sheet and roast for 30 minutes until tender.
- Whisk together the sauce ingredients. Serve carrots drizzled with tahini sauce and sprinkled with parsley.
