Za’atar Roasted Carrots

Za’atar spice adds a really nice zing to this elegant, delicious carrot dish.

Ingredients: 

  • 1 bag baby carrots or 1 bunch small carrots, greens trimmed to retain 2-3 inches
  • 2 teaspoons za’atar
  • pinch cayenne pepper
  • 1/2 teaspoon sea salt
  • 1 tablespoon olive oil

Tahini Sauce

  • 1/2 cup tahini
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • parsley for garnish

Instructions:

  1. Heat oven to 425°F. Toss the carrots with the oil in a bowl. Sprinkle on the seasonings and toss until evenly coated. Spread carrots on a rimmed baking sheet and roast for 30 minutes until tender.
  2. Whisk together the sauce ingredients. Serve carrots drizzled with tahini sauce and sprinkled with parsley.
