Strawberry Coconut Popsicles

1 13.5 oz can coconut milk
2 cups chopped strawberries
1 teaspoon vanilla
Stevia or maple syrup, to taste
Big pinch sea salt

Blend the ingredients in a blender. Pour into popsicle molds and insert the sticks. Freeze overnight or for several hours. To remove, run under hot water to loosen the popsicles from the mold. Enjoy immediately or keep frozen in a sealed container until ready to eat. Makes about 8 popsicles.
