How to Make Skillet Cornbread

One of the secrets to making wholesome, homemade soaked cornbread is allowing the cornmeal to soak before baking. This traditional preparation method helps improve the digestibility of cornmeal and may increase nutrient availability, while also creating a moist, tender texture. The result is a flavorful cast iron skillet cornbread that combines old-fashioned cooking wisdom with simple, nourishing ingredients.

Everything You Need to Make Homemade Soaked Skillet Cornbread

Ingredients:

  • 1/2 cup all-purpose flour
  • 1 1/2 cups cornmeal
  • 1 1/2 cups buttermilk
  • 1 tablespoon sugar, or more if you like your cornbread sweeter
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/4 cup butter, melted

Instructions:

  1. In a large bowl, combine flour, cornmeal, and buttermilk. Cover and let mixture sit overnight or up to 24 hours.
  2. When ready to bake cornbread, heat oven to 400°F and spray a 10-inch cast iron skillet with cooking spray.
  3. Stir the remaining ingredients into the cornmeal mixture and pour into skillet. Smooth out the top with a rubber spatula.
  4. Bake for 20 to 25 minutes until golden brown and a toothpick comes out clean. Cool about 15 minutes before slicing. Serve with butter and honey.

Why Does My Cornbread Stick to My Cast Iron Skillet?

If your cornbread is sticking to your skillet, it’s probably down to a few possible reasons, such as:

  • A cold skillet: If you pour batter into a cold pan, the cornbread will cling to the skillet as it expands.
  • Insufficient fat: Cast-iron skillets need plenty of oil or grease; be generous with your butter, vegetable oil, or bacon grease to coat the bottom and sides.
  • Damaged seasoning: Uneven seasoning, flaky seasoning, or seasoning removed by harsh detergents will cause batter to stick to your pan.
