Zucchini Parmesan Sticks

4 small to medium zucchini, ends trimmed, quartered length-wise
1/2 heaping cup finely grated fresh Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon Italian seasoning
Black pepper, to your liking
1-2 tablespoons olive oil
Sea salt
Optional: marinara sauce for dipping

  1. Heat oven to 350°F. Cover a sheet pan with parchment paper or silicone mat.
  2. Mix together the Parmesan and seasonings in a bowl.
  3. Layer the zucchini sticks on the sheet pan. Drizzle with the olive oil and toss the sticks until they are all coated evenly in oil; leave a little bit of space between them. Give them a sprinkling of sea salt, then sprinkle the cheese mixture over the zucchini.
  4. Bake for 15 minutes. Turn broiler on high and broil for a few minutes until nicely browned. Be careful not to burn. Serve immediately with marinara dipping sauce if desired.
