Yogurt Almond Butter Pancakes
1 egg
1/2 cup plain yogurt
1/4 cup smooth almond butter
1 teaspoon vanilla
1/4 cup milk
1 tablespoon honey
1/2 teaspoon salt
1/2 cup AP flour
1/2 teaspoon baking soda
oil or clarifed butter for cooking
optional: sauteed apples, sliced almonds, maple syrup, butter
- Whisk the egg, yogurt, almond butter, vanilla, milk, and honey in a medium bowl. Add the salt, flour, and baking soda and stir until smooth.
- Heat a cast iron or heavy skillet over medium-low heat. Add some oil or clarified butter. Pour 1/4 – 1/3 cup of batter into pan and cook until browned on the bottom. Flip and cook the other side. Keep warm on a sheetpan in an oven set at 250°F. Cook remaining batter. Serve with sliced almonds, apples, butter, and maple syrup, if desired. Makes 6 pancakes.
