Wheat Berry Barley Salad with Smoked Gouda

Serves 6
1 cup wheat berries
1 cup pearl barley
1 tablespoon salt in 4 qt. of water
1 1/2 cups vegetables, medium dice (diced celery, red pepper, cucumber, peas, zucchini, corn, etc.)
1 pint cherry tomatoes cut in half
6 green onions, finely chopped
½ a red onion, finely chopped
3/4 cup fresh parsley or cilantro, finely chopped
½ cup smoked Gouda cheese, diced small
Seasonal salad greens
Dressing:
2 garlic cloves minced
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon black pepper
1 ½ teaspoons sea salt
- Add wheat berries to boiling salted water. Stir, reduce heat and simmer 30 minutes, then stir barley into the pot and simmer about 30-40 minutes more until tender. Drain and cool in a large serving bowl.
- For dressing: Whisk together the minced garlic, vinegar, salt, pepper, and oil in a small bowl. Pour dressing over the chopped vegetables and cooled grains and cheese cubes and toss well. Taste and adjust seasonings. Serve over salad greens.
