Tuna Cottage Cheese Salad
2 cans tuna, drained
1 cup full-fat cottage cheese
1 teaspoon mustard, any kind
1/2 teaspoon onion powder
1 pickle, chopped
1 stalk celery, chopped
1/4 cup red onion, finely chopped
Seasoned salt to taste (We like Herbamare Herbs Sea Salt)
Black pepper, to taste
Optional but really good:
1/4 cup toasted, chopped walnuts
1/4 cup raisins
Mix everything together in a bowl. Taste and adjust salt and pepper if needed. You can eat it immediately but it tastes even better if you refrigerate it for awhile to let the flavors meld. Enjoy as a sandwich spread, with crackers, or atop greens.
