Tricolor Slaw

1/2 head red cabbage, cored, shredded
1/2 head green cabbage, cored, shredded
2 large carrots, peeled, shredded
1 cup cilantro, chopped
1/2 cup parsley, chopped
1/2 cup thinly sliced sweet onion
3-4 limes, juiced
1/2 cup extra virgin olive oil
2 teaspoons maple syrup
Sea salt and freshly ground pepper, to taste

Toss all ingredients together in a big bowl. Taste and add more salt, pepper, lime juice, or maple syrup as needed. Let sit for 30 minutes before serving to allow flavors to meld.
