Tofu with Peanut Sauce

1 block firm tofu
4 teaspoons tamari
2 tablespoons nutritional yeast
1/2 teaspoon garlic powder
black pepper
1/2 cup smooth peanut butter
1 tablespoon maple syrup
2 tablespoons tamari
3/4 teaspoon dried ginger
1 teaspoon toasted sesame oil
juice from 1 lime
4-5 tablespoons water
Big pinch cayenne pepper
- Cut the tofu into 1/2 – 3/4 inch slabs. Try to cut them all the same thickness. Lay the slabs onto half of a clean dish towel. Fold the dish towel over the tofu. Place a cookie sheet over the towel and place a few heavy items on top, such as soup cans. Press for 15 minutes.
- Heat oven to 425°F. Cut the slabs into cubes or triangles. Add to a pie plate or shallow dish. Drizzle tofu with 4 teaspoons tamari. Toss gently. Sprinkle over the nutritional yeast, garlic powder, and black pepper and toss gently again. Spread out on a baking sheet and bake for 15 minutes. Flip the tofu pieces and bake another 10 minutes.
- While tofu is baking, whisk together the remaining ingredients in a bowl until smooth. If the sauce seems too thick, stir in a bit more water. Serve the tofu with peanut sauce drizzled over the top. Save any remaining peanut sauce to top other foods like roasted or steamed veggies, rice, quinoa, etc. Serves 2-3.
