Thai-Style Tomato Cucumber Salad
2 large ripe tomatoes, about 1 pound, chopped
1 medium cucumber, peeled if desired, sliced
1/4 cup red onion, chopped
1/2 cup chopped fresh herbs: cilantro, basil, mint
1/4 cup roasted peanuts, chopped
Optional: 1 small hot pepper, chopped
1 clove garlic, minced
Juice from 1 lime
2 teaspoons fish sauce (or vegan fish sauce)
1 teaspoon maple syrup
2 teaspoons olive oil
Sea salt
Add the tomatoes, cucumber, red onion, herbs, and hot pepper, if using, to a bowl. Whisk together the garlic, lime juice, fish sauce, maple syrup, oil, and a big pinch sea salt in a small bowl. Drizzle vegetables with the dressing and toss gently to coat. Taste and see if it needs more salt or acid. If it needs more acid, add more lime juice if you have it, or add a few drops of apple cider vinegar. Serve sprinkled generously with chopped peanuts.
