Tater Tot Breakfast Casserole
8 slices bacon
1 16-oz. bag Cascadian Farm frozen tater tots
6 eggs
1 cup half and half
1/2 teaspoon salt
Several grinds of fresh pepper
1 heaping cup grated cheddar cheese
- Cook bacon until crisp. Drain and chop.
- Heat oven to 350°F.
- Arrange half the tater tots in a greased 8-inch square baking dish.
- Sprinkle the bacon over the tots.
- Beat together the eggs, half and half, salt and pepper. Stir in the grated cheese. Pour this mixture over the tots. Arrange remaining tots on top. Cover with foil and bake for 25 minutes. Uncover and continue baking for 20-30 minutes until set in the center and golden brown. Cut into squares and serve hot.
Optional tasty add-ins: 1 can green chilies, sautéed onion, sautéed green pepper, chopped green onion, sub cooked breakfast sausage for the bacon
