Taco Salad
If you have taco fixings but no taco shells or tortillas, no problem! Turn the taco fillings into a satisfying salad. You should have enough for 3 good size salads.
1 lb ground beef (or ground turkey)
1 package Simply Organic taco seasoning
Lettuce, chopped
Tomatoes, chopped
Avocado, sliced
Green or red onion, chopped
Fresh cilantro, chopped
Black beans, or other beans such as kidney, red, etc.
Grated cheddar cheese
Sour cream
Tortilla chips
Other topping ideas: corn, roasted red pepper, diced green pepper, olives, red cabbage, lime wedges, hot sauce, salsa, plain yogurt
Follow the taco seasoning package instructions for cooking the meat. This will take about 10 minutes. Have all your other ingredients prepped and ready to go. Grab some big bowls and start with lettuce, followed by warm meat, followed by any other toppings. Drizzle with lime cream* and serve immediately while the meat is still warm.
*Lime cream: mix sour cream with fresh lime juice
