Sweet Potato Fries
2 lbs sweet potatoes, about 2 large, peeled
1 tablespoon potato starch or corn starch
1/2 teaspoon fine sea salt
2 tablespoons olive oil or neutral vegetable oil
Optional seasonings: cajun seasoning, black pepper, garlic powder
- Heat oven to 400F.
- Cut the sweet potatoes into sticks about 1/3 inch thick. Cut them as uniformly as possible. Toss the sweet potato sticks with the starch and salt and optional seasonings until they are evenly coated. Drizzle over the olive oil and toss again until coated.
- Spread the sweet potatoes on two parchment-lined baking sheets. Space them apart so they aren’t touching.
- Bake for 20 minutes. Remove from oven and flip potatoes over using a metal spatula. Return to oven, placing the pan that was on the top rack on the bottom rack, and vice versa. Bake for another 15-20 minutes or until lightly browned. Some of the edges and tips may look very brown and that’s ok. Serve warm.
