Summer Fruit Salsa
2 cups finely chopped fresh seasonal fruit (strawberries, cherries, kiwi, peaches, nectarines, grapes, pineapple, mango, etc.)
1/2 – 1 jalapeno pepper (depending on your heat preference), seeded, chopped fine
1/2 red bell pepper, chopped fine
1/2 cup chopped fresh cilantro
1 finely chopped green onion or 3 tablespoons finely chopped red onion
juice from 1-2 limes, depending on how big they are
1/2 teaspoon sea salt or to taste
Few grinds fresh black pepper
Toss all ingredients together in a bowl. Taste and see if it needs more salt or lime juice. Serve immediately with tortilla chips, or serve with grilled meat.
