Strawberry Tomato Salsa
1 pint strawberries, washed, chopped
1 pint cherry tomatoes, chopped, or 1 large tomato, cubed
1/3 cup red onion, chopped fine
1 jalapeño, seeded, chopped fine
1/2 cup cilantro leaves, chopped
Juice from 1 lime
1-2 tablespoons olive oil
salt, to taste
Toss everything together in a bowl. Let sit a few minutes to let flavors meld. Serve with tortilla chips. Best if eaten the same day you make it.
