Strawberry Spinach Salad

Serves 4 – 6

1/2 small red onion, thinly sliced
10 oz baby spinach 
1 quart strawberries, hulled, halved or quartered
3/4 cup crumbled feta cheese
1/2 cup sliced almonds
dressing: 
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon maple syrup
1 teaspoon Dijon mustard
1/2 teaspoon salt
black pepper to taste

Whisk the dressing ingredients together in a small bowl. Add the spinach, strawberries, onion, almonds, and goat cheese to a large bowl. Add a good splash of the dressing and toss lightly to coat everything. Add more dressing if needed or to your liking. Serve immediately.
