Strawberry Salsa
1 pint strawberries, washed, trimmed, and chopped
4 roma tomatoes, seeded and chopped
1 jalapeno, seeded and chopped (or red pepper flakes to taste)
2 tablespoons sweet onion, minced
juice of one lime
1 tablespoon olive oil
sea salt to taste
Combine all ingredients in a bowl. Cover and let sit in refrigerator for one hour to let flavors meld
before serving. Makes 4 cups.
