Strawberry Omelette
3 eggs
1 tablespoon heavy cream
salt and pepper
1/3 cup sliced strawberries
drizzle of honey
2 tablespoons crumbled fresh goat cheese
clarified butter or ghee
- Beat the eggs, cream, salt and pepper until blended.
- Drizzle a little honey over the strawberries and toss to coat.
- Heat a tablespoon of ghee in an omelette pan or small cast iron skillet over medium heat and swirl the pan to coat the sides with the fat. Add the egg mixture to the skillet and use a spatula to lift the edges of the eggs as they cook to allow uncooked eggs to run beneath. When the top of the omelet is almost cooked, gently flip the omelet and allow it to cook for about 10 seconds. Turn off heat. Place the strawberries on one side of the eggs and sprinkle with the goat cheese. Fold the omelette in half and carefully slide it onto a plate. Serves 1 hungry person.
