Strawberry Compote
1 lb organic strawberries, quartered
¼ cup cane sugar
¼ cup cold water
2 teaspoons arrowroot powder or cornstarch
1/2 teaspoon vanilla extract
Whisk the arrowroot or cornstarch with the cold water until smooth. Add to a heavy saucepan with the remaining ingredients. Turn heat to medium. Cook, stirring, until strawberries are softened and sauce has thickened, about 10 minutes. Let cool before serving.
