Strawberry Buttermilk Pancakes
1 cup all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 cup + 2 tablespoons buttermilk
1 teaspoon vanilla
2 tablespoons melted butter
1 pint strawberries, washed, dried, hulled, sliced
Vegetable oil or clarified butter
- Whisk together the flour, sugar, baking powder and soda, and salt in a small bowl.
- Whisk the egg in a larger bowl. Whisk in the buttermilk and vanilla.
- Add the egg mixture to the dry mixture and whisk until smooth. Mix in the melted butter.
- Heat a heavy skillet over medium-low heat and add some oil or clarified butter to coat the bottom. Use a 1/3 cup measure to scoop batter into skillet. Place strawberry slices on top of the pancake. Cook pancake until lightly browned. Flip carefully and cook the other side until browned. Remove to a plate or pan in a warm oven. Repeat with remaining batter and sliced strawberries. Makes about 8 pancakes, enough for 2 people. Serve with butter and maple syrup.
