Strawberries with Vanilla Cardamom Pudding
2 1/2 cups cold whole milk
2/3 cup cane sugar
pinch sea salt
3 tablespoons cornstarch
1/2 teaspoon cardamom
1 teaspoon vanilla extract
Whisk together the milk, sugar, salt, cornstarch, and cardamom in a medium-size heavy saucepan until combined and no cornstarch lumps remain. Cook over medium-low heat, stirring frequently, until mixture comes to a boil. Continue to cook and stir 2 more minutes. Remove from heat and stir in vanilla. Let cool and serve with berries.
Notes: make sure the milk is cold when mixing with the corn starch or you will have lumpy pudding. Use a flat whisk if you have one to prevent the milk from scorching in the corners of the saucepan.
