Savory Dutch Pancake
4 eggs
3/4 cup milk
1/2 cup all-purpose flour
1/2 teaspoon sea salt
black pepper, to taste
2 tablespoons butter
Optional batter add-ins: chopped fresh herbs, shredded cheese, chopped bacon, onion powder
Optional toppings, pick 2-3 combo your choice: bacon, ham, sausage, cheese, greens, tomatoes, red or green onion, caramelized onion, red or green bell pepper, smoked salmon, sunny side up or soft boiled egg, fried potatoes
- Place a 10 inch cast iron skillet in the oven and heat oven to 425°F.
- Add the eggs and milk to a blender and blend together. Add the flour, salt, and pepper and blend until smooth. Or do this in a bowl and use an immersion blender. Beat in any add-ins using a whisk.
- Remove the skillet from the oven and add the butter. Swirl it around the pan to melt and coat the bottom and sides; pour in the batter. Bake for 20 minutes or until pancake is puffed and lightly browned.
- Top with optional toppings and serve warm. Serves 2 – 4 people depending on how hungry they are.
