Sam Choy’s Hibachi Miso Chicken with Peanut Butter
Marinade:
1/2 cup miso paste (white or dark)
1/2 cup smooth peanut butter
1/2 cup sugar
1/2 cup shoyu
1/2 cup beer, any kind
2 tablespoons minced ginger
1 tablespoon minced garlic
5 lbs boneless, skinless chicken thighs
Combine marinade ingredients in a bowl. Add the chicken and marinate overnight. Grill the chicken until cooked through.
